Easy Mediterranean Salad

One of the most interesting jobs of my past was when I was a salad cook. Honestly, I didn't particularly like it. I don't know about you but finding bugs while washing romaine every day isn't exactly my idea of fun. Regardless, it was a learning experience. It was the first time I was ever in "savory" cooking. Previously, I had strictly stuck to baking and pastries. That job taught me so much about cooking on the line. It taught me about plating (even though I still stink at it). It taught me about presentation and so much more. One of the more popular salads we had there was this Mediterranean salad. It's very easy to make and I'm sharing the recipe with you. The only difference is at the restaurant, they used roasted red pepper hummus. You can do the same if you'd like. This will likely be the shortest post I'll ever have on this blog, because well...it's a salad recipe. There's not much to it. Despite all that, I hope you do give this recipe a try because it is a pretty great salad.

INGREDIENTS FOR EASY MEDITERRANEAN SALAD:

  • Spring Mix - because it's super easy to use and delish
  • Pickled Red Onions - adds a nice zing
  • Roasted Red Pepper - very flavorful
  • Cucumber - adds a nice crunch and freshness to our salad
  • Feta Cheese - because we need that salty tang
  • Black Olives - to add some briny flavor
  • Large Tomato - I don't like them but do you
  • Fried Pita - adds crunch and texture
  • Greek Dressing - our flavor base
  • Salt - brings out the rest of the flavors
  • Hummus- a nice bed for our salad

HOW TO MAKE EASY MEDITERRANEAN SALAD:

  • Add your olives, cucumbers, and feta to your large mixing bowl. Add in your spring mix, roasted red pepper, and pickled red onion. Pour in the Greek dressing and toss lightly.
  • To plate, spread hummus onto the plate to form a bed for the salad. Begin to plate your salad in a large mound. Add on some extra pickled red onion and roasted red pepper on top as garnish. Finally, top with some fried pita.

Ingredients
  

  • 5 oz spring mix
  • a few pickled red onion slices
  • a few roasted red pepper slices
  • ¼ cucumber halved and sliced
  • ½ cup feta cheese cubed
  • 8-12 black olives sliced
  • 1 large tomato sliced into large wedges (optional)
  • a handful of fried pita
  • ½ cup greek dressing
  • pinch of salt
  • hummus Can be found on my blog. Optional for plating.

Instructions
 

  • Add your olives, cucumbers, and feta to your large mixing bowl. Add in your spring mix, roasted red pepper, and pickled red onion. Pour in the greek dressing and toss lightly.
  • To plate, spread hummus onto the plate to form a bed for the salad. Begin to plate your salad in a large mound. Add on some extra pickled red onion and roasted red pepper on top as garnish. Finally, top with some fried pita.
