Instructions
Add your olives, cucumbers, and feta to your large mixing bowl. Add in your spring mix, roasted red pepper, and pickled red onion. Pour in the greek dressing and toss lightly.
To plate, spread hummus onto the plate to form a bed for the salad. Begin to plate your salad in a large mound. Add on some extra pickled red onion and roasted red pepper on top as garnish. Finally, top with some fried pita.
