Easy Sunday Night Pasta

Ingredients
  

Pasta

  • 8 cups pasta I used Farfalle
  • 12 cups cold water
  • 1 tablespoon olive oil
  • 1 tablespoon sea salt or kosher salt

Meat Sauce

  • 2 medium onions diced
  • 2 large garlic cloves minced
  • 1 tablespoon Italian seasoning
  • 1 28 oz can San Marzano whole tomatoes
  • 1 tablespoon tomato paste
  • ¼ cup olive oil
  • salt and black pepper to taste
  • pinch of granulated sugar
  • teaspoon crushed red pepper
  • 1 lb ground chuck
  • ¾ cup pasta water

Finishing Ingredients

  • ¼ cup parmesan cheese
  • 1 tablespoon Italian flat leaf parsley
  • 1 basil leaf torn (optional)

Instructions
 

  • In a large pot, add the cold water, salt, and olive oil and bring to a rolling boil.
  • Add pasta to your water, stir occasionally, and boil for about 6-8 minutes or until slightly more firm than al dente.
  • Once cooked, drain all but ¾ cup of the pasta water. Reserve the pasta water and set the pasta to the side.
  • Rinse off your pasta pot and dry it. Place the pot over medium-high heat and drizzle in some olive oil. Add in the diced onions and stir. Cook until the onions are translucent, for a few minutes. Add in your garlic and stir. Cook for a couple of minutes. Add in the Italian seasoning and stir for a minute or so.
  • Next, add in your beef all at once. Use a wooden spoon to begin to break down and mix the beef with the onions. Continue to cook for a few minutes until the meat is browned.
  • Add in the tomato paste and stir with the beef and onion mixture to combine. Once the tomato paste is well combined, add in the whole tomatoes and use your wooden spoon to break up the tomatoes. Stir until everything is well mixed. Pour in your pasta water and stir again.
  • Cover the pot and turn your heat setting to low. Allow the sauce to simmer for 5-10 minutes.
  • Add your pasta into your meat sauce all at once and give it a good stir. Turn the heat off and add in the rest of your seasonings and mix. Add in the Italian flat-leaf parsley and parmesan cheese. Give it one final good mix.

Notes

When I serve this, I actually like adding more cheese, fresh parsley and basil, and a drizzle of olive oil for each bowl.
Serve with toasted garlic bread.
