Tasty Mixed Berry Crumble

This tasty mixed berry crumble is incredibly easy to make and absolutely heavenly topped with whipped cream or vanilla ice cream. It involves few ingredients, it's not too sweet and it's perfect for the spring and summer. I absolutely love desserts that give you a flavor, temperature, or texture contrast and this provides all three as we have the warm tangy berry base topped with the buttery, sweet streusel topping served with cold whipped cream or ice cream. Delish! This dish is perfect if you're looking for a dessert to impress your loved ones without spending all your time in the kitchen. It comes together so quickly and easily.

What's the difference between crisp, crumble, cobbler and buckle?

Many of us, including me, are often confused on what constitutes a crisp, crumble, cobbler, or buckle. Let's break it down as best as we can.

  • Crisp: A crisp is comprised of fruit baked with a streusel-like topping, generally containing oats, nuts, or a combination of both.
  • Crumble: From what I've gathered, a crumble is basically a crisp minus the oats or nuts. Thus, we're calling our version a crumble.
  • Cobbler: Cobbler is a dessert consisting of a fruit filling poured into a large baking dish and covered with a batter, biscuit, or dumpling before being baked. Southern recipes more closely resemble a deep-dish pie including both a top and bottom crust.
  • Buckle: A single-layer cake with berries or cut-up fruit in the batter, giving it a "buckled," or indented, appearance. There's a more batter-to-fruit ratio.

Ingredients for my mixed berry crumble:

  • Berries– Adds tang and sweetness
  • Granulated and Light Brown Sugar - Adds sweetness
  • Lemon Zest and Juice – Adds more tanginess
  • Unsalted Butter – Helps bind the streusel topping and berry filling
  • Cinnamon – Adds a bit of spice and complements our other flavors
  • Baking Powder– Puffs up the streusel topping a bit
  • Salt – Brings out the rest of the flavors
  • Cornstarch– Helps bind the berry filling
  • Vanilla Extract –Adds sweetness

How to Make Mixed Berry Crumble:

  • Make streusel topping - Combine the streusel topping ingredients in a large bowl. Gently toss the cold butter with the ingredients to coat the butter. Mix by tossing and flattening the ingredients in your palm. You should have large lumps of streusel mixture after mixing.
  • Make berry filling – Toss all the berry ingredients together until combined.
  • Top the berry filling with the streusel and bake – Pour the berry mixture into an 8x8" baking dish greased with a bit of cooking spray. Top with the streusel mixture making sure to add in large clumps and spread evenly. Bake at 350°F for 30-40 minutes or until the berry filling is bubbling and the top is golden brown. Check at the 25 minutes mark.
  • Serve warm – Remove from the oven and allow to cool for about ten minutes. Top with a dusting of powdered sugar. Serve warm with whipped cream or vanilla ice cream.

Ingredients

Streusel Topping

  • 2 cups all-purpose flour
  • ¾ cup sugar
  • ½ cup light brown sugar
  • 1 teaspoon salt
  • ½ teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
  • 8 oz unsalted butter, cold but slightly softened

Berry Filling

  • 6 cups mixed berries (I used blueberries, raspberries, blackberries)
  • ¾ cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 large lemon (zest and juice)
  • ¼ teaspoon cinnamon
  • ½ teaspoon salt
  • 1 teaspoon vanilla

Instructions

Notes

  • You can use frozen berries instead of fresh ones.
  • You can mix up the berries as you'd like as long as you have six total cups.
  • Make sure the streusel topping is cold when you place it on top of the berry filling. The butter should be cold but slightly softened. You can place the topping in the fridge for half an hour after mixing if it's not cold enough.
