My mom hates cooking. She does it because she has to, but if she had her choice, she wouldn’t do it. So, you can imagine why I was surprised when I walked into her kitchen one day and I saw here pickling. People that typically pickle and can things are the people who enjoy spending time on their food. That’s not my mom. Anywho, she ended up experimenting with a recipe and she made two jars of pickles. She gave one to one of her friends. Her kids raved about it and wanted more. Thus, the reason for the video. My mom will demonstrate a Middle Eastern take on pickling.
Here’s what you’ll need:
A veggie to pickle, such as cucumbers:
Start off with cold water in a measuring cup. Then add the salt, sugar and vinegar and give it a mix.
Poke the cucumbers or whatever you’re pickling with a knife a few times. Stack the item your pickling in a jar until packed full.
Slice halfway through some garlic cloves and place the whole clove in the jar. Top with the water mixture and some red pepper flakes.
Cover with plastic wrap and the lid, shake and leave for about 25 days and enjoy!
